Protein-Packed Veggie Egg Scramble 🌞🍳
Kickstart your weekend with this delicious, high-protein breakfast scramble! Perfect for fueling up and keeping you full all morning. 🥬🍅💪 🥘 Recipe: Servings: 1 Prep Time: 5 mins Cook Time: 10 mins Ingredients: • 3 large eggs + 3 egg whites 🥚 • 1/2 cup diced bell peppers 🌶️ • 1/2 cup chopped spinach 🥬 • 1/4 cup cherry tomatoes, halved 🍅 • 1/4 cup shredded cheese (optional) 🧀 • Salt & pepper to taste • Cooking spray or 1 tsp olive oil Instructions: 1. Whisk together eggs and egg whites in a bowl with a pinch of salt & pepper. 2. Heat a nonstick skillet over medium heat; spray with cooking spray or add olive oil. 3. Sauté bell peppers for 2-3 minutes, then add spinach and cherry tomatoes until softened. 4. Pour in the eggs and stir until cooked to your liking. 5. Top with cheese if desired. Serve warm and enjoy!
