Chocolate Chip Banana Muffins
These may be the best muffins I have ever made. Delicious, healthy, and gluten free Ingredients: - 3 ripe bananas (mashed) - 1 cup almond flour - 1 egg - 1 tsp vanilla extract - 1/4 cup chocolate chips (dark or milk, your choice) - 1 tsp peanut butter for each muffin - Optional: Cocoa powder for dusting Instructions: 1. Preheat Oven: Set your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with oil. 2. Mash Bananas: In a large mixing bowl, mash the bananas until smooth. 3. Mix Wet Ingredients: Add the egg and vanilla extract to the mashed bananas. Stir until well combined. 4. Add Almond Flour: Gradually fold in the almond flour until you achieve a smooth batter. 5. Add Chocolate Chips: Gently mix in the chocolate chips. 6. Fill Muffin Tin: Spoon the batter into the muffin tin, filling each cup about 3/4 full. 7. Bake: Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. 8. Cool and Serve: Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. 9. Top with Peanut Butter: Place 1 tsp of peanut butter on top of each muffin. Use a toothpick to swirl it slightly into the batter. 10. Dust with Cocoa: Lightly sprinkle cocoa powder on top for added flavor (optional).
