Chocolate Chip Banana Muffins
These may be the best muffins I have ever made. Delicious, healthy, and gluten free Ingredients: - 3 ripe bananas (mashed) - 1 cup almond flour - 1 egg - 1 tsp vanilla extract - 1/4 cup chocolate chips (dark or milk, your choice) - 1 tsp peanut butter for each muffin - Optional: Cocoa powder for dusting Instructions: 1. Preheat Oven: Set your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with oil. 2. Mash Bananas: In a large mixing bowl, mash the bananas until smooth. 3. Mix Wet Ingredients: Add the egg and vanilla extract to the mashed bananas. Stir until well combined. 4. Add Almond Flour: Gradually fold in the almond flour until you achieve a smooth batter. 5. Add Chocolate Chips: Gently mix in the chocolate chips. 6. Fill Muffin Tin: Spoon the batter into the muffin tin, filling each cup about 3/4 full. 7. Bake: Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. 8. Cool and Serve: Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. 9. Top with Peanut Butter: Place 1 tsp of peanut butter on top of each muffin. Use a toothpick to swirl it slightly into the batter. 10. Dust with Cocoa: Lightly sprinkle cocoa powder on top for added flavor (optional).

Ingredients: - 1 cup cooked ground turkey (seasoned with breakfast taco seasoning) - 1/4 cup diced onions - 3 eggs (scrambled) - 2 tbsp unsweetened Greek yogurt - 2 tbsp guacamole - 1-2 small tortillas (whole wheat or low-carb, your choice) - Chipotle ranch dip or your favorite dip for serving Instructions: 1. Heat a non-stick skillet over medium heat. 2. Add the ground turkey and diced onions, cooking until the turkey is browned and onions are soft. 3. Stir in breakfast taco seasoning to taste. 4. In a separate pan, scramble the eggs until cooked but still soft. 5. Warm the tortillas in a pan until slightly toasted. 6. Add a scoop of seasoned turkey and onions. 7. Top with scrambled eggs and guacamole and Greek yogurt 8. Plate the and serve with a side of chipotle ranch dip or your preferred sauce for extra flavor.
