High-Protein Crispy Breakfast Taco Recipe
Ingredients:
1 cup cooked ground turkey (seasoned with breakfast taco seasoning)
1/4 cup diced onions
3 eggs (scrambled)
2 tbsp unsweetened Greek yogurt
2 tbsp guacamole
1-2 small tortillas (whole wheat or low-carb, your choice)
Chipotle ranch dip or your favorite dip for serving
Instructions:
Heat a non-stick skillet over medium heat.
Add the ground turkey and diced onions, cooking until the turkey is browned and onions are soft.
Stir in breakfast taco seasoning to taste.
In a separate pan, scramble the eggs until cooked but still soft.
Warm the tortillas in a pan until slightly toasted.
Add a scoop of seasoned turkey and onions.
Top with scrambled eggs and guacamole and Greek yogurt
Plate the and serve with a side of chipotle ranch dip or your preferred sauce for extra flavor.
