High-Protein Crispy Breakfast Taco Recipe
Ingredients:
  • 1 cup cooked ground turkey (seasoned with breakfast taco seasoning)
  • 1/4 cup diced onions
  • 3 eggs (scrambled)
  • 2 tbsp unsweetened Greek yogurt
  • 2 tbsp guacamole
  • 1-2 small tortillas (whole wheat or low-carb, your choice)
  • Chipotle ranch dip or your favorite dip for serving
Instructions:
  1. Heat a non-stick skillet over medium heat.
  2. Add the ground turkey and diced onions, cooking until the turkey is browned and onions are soft.
  3. Stir in breakfast taco seasoning to taste.
  4. In a separate pan, scramble the eggs until cooked but still soft.
  5. Warm the tortillas in a pan until slightly toasted.
  6. Add a scoop of seasoned turkey and onions.
  7. Top with scrambled eggs and guacamole and Greek yogurt
  8. Plate the and serve with a side of chipotle ranch dip or your preferred sauce for extra flavor.
