Tonight I threw together a bunch of veg and roasted them along with chickpeas for a sheet pan dinner. I tossed everything in the aquafaba from the chickpeas instead of using oil. I also made quinoa and put it all on top of a bed of raw spinach and dressed it with a sauce I made out of cashews, dill, garlic, onion and jalapeño. Easy, minimal dishes and oil free 🫶🏽💚
