16 organic medjool dates
1/4 cup milk of choice
1/4 cup melted coconut oil
1 1/2 tbsp peanut butter
1 1/2 tsp Vanilla extract
6 apples of choice
OPTIONAL TOPPINGS
Chopped nuts
Coconut flakes
chocolate chips
melted chocolate
Add the pitted dates to a food processor or blender along with the milk, coconut oil, peanut butter and vanilla. Blend well until you reach a smooth caramel. It will be thick and sticky so it might take a bit to blend. Scrape down the sides if necessary.
Push a stick in the middle of the apples. Use a spatula to spread a thick layer of the caramel over the apples. Roll the apples in any toppings you want and drizzle melted chocolate. Or leave it like it is. Put the apples in the fridge for an hour or linger to let the caramel get firm. Store in fridge till ready to eat.
