Christmas Salad
I made this for Thanksgiving everyone loved it. It’s delicious with chicken too.

Ingredients πŸ“‹
For the Salad:
6 cups mixed greens (spinach, arugula, or baby kale)
1/2 cup pomegranate seeds
1/2 cup candied pecans or walnuts
1/2 cup crumbled goat cheese or feta
1/2 cup thinly sliced red apples or pears
1/4 cup dried cranberries
For the Dressing:
1/4 cup olive oil
2 tablespoons orange juice
1 tablespoon apple cider vinegar
1 tablespoon honey or maple syrup
1/2 teaspoon Dijon mustard
Salt and pepper, to taste

Prepare the Dressing:
In a small jar or bowl, whisk together the olive oil, orange juice, apple cider vinegar, honey, Dijon mustard, salt, and pepper until emulsified. Taste and adjust seasonings as desired.
Assemble the Salad:
In a large serving bowl, layer the mixed greens, pomegranate seeds, candied nuts, goat cheese, apple slices, and dried cranberries.
Dress and Toss:
Drizzle the dressing over the salad just before serving. Toss gently to combine, ensuring all ingredients are coated.
Serve:
