One of our favorite family Mexican meals
I could literally eat this everyday. It's vegan, but we aren't, so I tweak it. I make 5# of taco meat with homemade seasoning - most for this dinner and the rest to make breakfast or lunch the bext day.
On non-carb fasting days, I eat as is, with the addition of the meat. Instead of agave, I use a couple drops of liquid stevia, but it really isn't even necessary.
On carb fasting days, I will have it over salad with a just a sprinkle of quinoa, beans, and corn, along with the rest of the stuff, lots of taco meat. I do the onions and tomatoes together, then the corn and beans separate so I can have more control over the carbs.
It's super EASY! You can make everything ahead and just make the quinoa on the night you're eating it.
It is a little spicy and a lot delicious!
