Bill of Sale - yay or nay?

On the video of your full meetup, purchasing an iPad for $250 cash - as far as I can see, there's no signing of any paperwork, specifically a Bill of Sale. If I understood the video correctly, this was a cellular model iPad, so could in theory be as risky as a cellphone, which you normally advise signing a Bill of Sale for. What's the reason for NOT getting the guy to sign a Bill of Sale on this occasion?

I know there'll be a perfectly solid reason... But can I just ask why, sir? 🧐
