That’s quite a spread! I was trying to get ahead this year and bake a batch every weekend since Thanksgiving and store in the freezer. But, we ate them and now I don’t have any! 🤦‍♀️
Creamy Homemade Hamburger “Helper”
I saw a comment somewhere on my social media the other day about hamburger helper. It reminded me of my early teens and going to my dad’s on the weekends. Boy, did we eat a good amount of hamburger helper style dinners. It may not be great for you, but it did taste great, and I loved that time with him. That comment, however, did inspire me to try and create my own style of hamburger helper, but homemade. Here’s the recipe I whipped up: - 1 package pasta (penne works well) - 1 tbsp olive oil - 1 medium onion chopped - 2 pounds ground beef - 1 tsp garlic powder - 2 (14 ounce) cans diced tomatoes with juice - 1 (6 oz can) tomato paste - 1 tsp Dijon mustard - 1 tsp Italian seasoning - 3/4 cup heavy cream - Salt & pepper to taste - Freshly grated cheese—I used Parmesan and Gouda DIRECTIONS: * Cook noodles at any time. 1.) Heat olive oil in a large pan. Add in chopped onions and cook until translucent. 2.) In the same pan add in your ground beef and garlic powder. Brown your beef. 3.) Once browned, add in your diced tomatoes, tomato paste, Dijon mustard, and Italian seasoning. Stir and bring to a simmer. 4.) Once simmering, add in your heavy cream and season with salt and pepper to your liking. Stir in the cheese. 5.) Serve and enjoy!

I have a homemade hamburger helper recipe as well. It’s a family favorite, especially with my daughter! I think the key ingredient is fire roasted tomatoes… it makes a difference for sure.

I’m Sarah from SE Wisconsin. I’m married, have 2 teenagers at home and work full time. I try to cook as much as I can, but where I really struggle is good food for lunches and snacks - like alternatives for chips which is the go to for a lot of my family! I like to garden and have been canning what I grow for the last two years, to build up my pantry!

I definitely need to get better. It’s a lot of troubleshooting! Generally my dough is really sticky. Why? Sometimes the bread ends up tasteless, or dense or flat. It really is a science. I want to get to a point where I have a good schedule for baking and I don’t have to buy bread at the store.

@Mary Dewar it’s trial and error at first, be patient with yourself. I’m still learning…when you get that “perfect” loaf…nothing better!

Meal planning is my biggest struggle. I love the weeks when I have one, but I think there are more weeks when I don’t and before I know it, it’s 3pm and everything is still frozen.

@Jake Widmann It would help me for sure. It’s not so much the recipes I’m after as the ideas. Especially as we’re trying to transition to healthier eating, some of our old standards and quick meals don’t fit the bill. And I have a 14-year-old boy in the house….its hard to keep up with his stomach!
