How do you take notes in your journal?

I am taking some "just for fun" educational classes and I'd like to dedicate a notebook to what I'm learning so I can go back and remember it. I feel like it's easy to consume content without writing it down.

Does anyone have any notes spreads to share for inspiration? They don't have to be pretty, I'm just looking for functional but unique ways to organize info too. Thanks!
