Carnivore Brown Butter Bites

Ingredients:
  • 1 cup (2 sticks) unsalted butter (preferably grass-fed for better flavor and nutrition)
  • 1 tablespoon beef gelatin powder (optional, for extra protein and texture)
  • Pinch of sea salt (optional)
Instructions:
  1. Brown the butter: In a medium saucepan, melt the butter over medium heat. Once melted, continue cooking, stirring occasionally. The butter will foam up and then begin to develop a nutty aroma and golden-brown color (about 5-7 minutes). Be careful not to let it burn. Once the butter has browned, remove it from heat and let it cool for a few minutes.
  2. Add the beef gelatin (optional): If using beef gelatin for added protein and structure, sprinkle it into the warm butter and whisk until fully dissolved. You may need to heat the butter slightly to help the gelatin dissolve.
  3. Pour into molds: Pour the browned butter mixture into silicone molds or an ice cube tray. This will help shape the bites for easy snacking.
  4. Chill to set: Place the mold or tray in the refrigerator/freezer for 1-2 hours, or until the butter bites are solid.
  5. Remove from molds: Pop the butter bites out of the molds and store them in an airtight container in the refrigerator.
