Thanks @Mubaraq Abdulmaleek, the challenge for us is getting as close to realtime as possible. It doesn't seem like there is any way to control this for Fabric Link so I'm still looking for alternatives.

@Anthony Kain Good luck with the transition. The setting up of it couldn't be easier - other than when you are selecting tables and waiting for the power apps screen to load. Everyone I have talked to has said there isn't a way of speeding it up currently so you are just reliant on whatever speed the refresh is. Any more frequent requirements you have to find another way.
