Brussels sprouts with Chipotle Honey Mustard. Why this works: Brussels sprouts are a superfood and are packed with vitamins C, K, and A, folic acid and fibre Roasting the sprouts gives them great texture. It balances sweet, sour and spicy perfectly. Choosing grainy mustard also gives it a little more texture as well. I have used a chipotle paste from Mexico given to me as a gift, and the wildflower honey is from a local business. These items give me a special personal connection to this dish, making it unique. Crispy, caramelized Brussels and a balanced sauce will satisfy almost anyone. I am confident this dish is a winner. This dish represents my philosophy: fresh, flavourful, & something familiar but also a little different.
