Any of you deal with food sensitivities and Eosinophilic Esophagitis (EoE)
I had lost 50 lbs over a 15 month period, by moving to a primary pescatarian diet, with eating whole foods and plant based and exercising on a regular basis. I started having issues with food getting stuck and trouble swallowing and ended being diagnosed with food sensitivities and Eosinophilic Esophagitis, which is causes chronic inflammation in the esophagus from the following food groups milk & dairy, eggs, wheat, soy, peanuts & tree nuts, fish & shellfish. Other foods that can trigger EoE, are fatty or fried foods, tomato sauce, alcohol, chocolate, mint, garlic onion and caffeine. In addition, I was diagnosed with food sensitivities to 26 different foods. Since this diagnosis I am struggling with what to eat as basically my pescatarian diet was no longer feasible and neither was my plant basis as I ended up being sensitive to several grains, beans & legumes as well as green beans, mushrooms, watermelon. I have put back on 22 lbs and am struggling with how to eat these days. Any help from ladies who deal with this would be appreciated.

@Thirlene B do you have a lot of allergies? That was the first thing my gastroenterologist commented on with me is the number of allergies I had. He said that it seems that a esinophilic esophagitis (EoE) is diagnosed more frequently in people with a high number of allergies. I have had allergies since I was an infant and as I have aged they have increased.

@Kathy Obrien I am working on it down 4 lbs. I can't eat fried foods at all end with horrible stomach cramps and diarrhea. They think it might be gallbladder related but my ultrasound was normal so I just totally avoid them, not worry it. I am not a coffee or caffeine drinker due to health issues I had cut caffeine and sodium. I have been using the cinnamon on apples, but since I don't drink coffee haven't tried it. I have found that some places will saute or broil fish if you ask, even if menu only says fried. I simply tell them I have food sensitivities and ask if they can accommodate me with not frying it. I haven't tried the cocoa powder.
CARBS. / PLANT BASED
I'm trying to not eat too much meat. Some meat for me is OK. But, how can we eat sort of "plant based" and still get ENOUGH protein? example: a bowl of fruit & oatmeal for breakfast....is that OK?Should we just kind of 'eye' it on our plate as far as how many total carbs should we eat per day? (I have heard 100 grams of carbs per day maximum, but I don't really know)

In addition to what Kathy said Hemp seeds added to protein smoothies or on salads are 10 grams of protein for 3 TBSP. Lentils, legumes, chickpeas all contain protein. I find it really challenging to get 100 grams of protein in being all plant based with my food sensitivities. Therefore, I try to be plant based, whole foods, pescatarian and avoid red meats. I do eat lean meats chicken and turkey. Try to eat all fresh and stay away from processed foods. If you are eating yogurt, is it the Greek one Nagina recommends oikos 20 yogurt? It has 20 grams of protein, add the hemp or flax seeds or nuts, or protein or collagen powder and you can get it to 30 grams. I found the plant based yogurts are so much lower in protein though.
