Today, I've been food prepping for when a girlfriend is staying next weekend. These (pictured) chickpea, mushroom and sweet potato burgers.
It's going to be a busy week so I also have vegan mayo, hummus and huge bowl of kale-slaw. PLUS, how gorgeous do these (bought!) giant falafel look?
Prepping food for a busy week to come is a non negotiable act of self-care for me. Or at least, buying my fast, lazy, delicious options in advance!
