Google meet transcript - sending automated price offeres.

I thinking about creating a system that would process Google Meet recordings of meetings with clients and automatically generate price offers and send emails based on their content. I have an idea of ​​how the system should work, but I would like to get recommendations on technical solutions.
Here are the basic steps the system should include:
Automatic recording of Google Meet meetings: Meetings are recorded and the recordings are saved to the cloud (Google Drive or other storage).
Transcription of the recording to text: The audio file (in MP3 or MP4 format) is processed into text transcription using a service such as Google Cloud Speech-to-Text or another similar tool.
Text analysis: The transcript is sent to a GPT model (ChatGPT or other AI tool) that extracts key information (eg price, date) based on the conversation.
Generating and sending a quote: Based on the information obtained, a quote is automatically generated and sent to the client by email.
I currently use Zapier for various automations and am considering building this solution within their automations and chatbots. If you have experience with Zapier or similar platforms, I'd appreciate any advice, especially when it comes to connecting with Google Meet, AI tools, and automated emailing.
